Peanut Butter Blossoms

Another cookie recipe today for you.  Just in case you were running low on your Christmas calorie intake.  Bahahahaha!  Really.  I know!  That is definitely an issue I’m NOT dealing with here, but you never know.  I’m here to assist in any way I can…. :p

When I first got married my sweet MIL gave me a great spiral bound cookbook.  She had gotten it through a wives’ group.  It’s one of those home-made fundraiser type cookbooks.  This one, in particular, has so many good recipes in it.  It’s called Recipes for Entertaining 1983 from the Ladies of the US Army Intelligence Center & School.  The book was compiled at Fort Huachuca, Arizona so it has some especially yummy Tex/Mex recipes in it.  It’s a great little book should you ever come across it.  My copy is completely dog eared and stained.  I think those are the marks of a successful cookbook, don’t you?

Anyway…I know there are many recipes out there for these cookies.  I just think this is an especially tasty one.  This recipe calls for shortening.  Nuff said!

Peanut Butter Blossoms

1 3/4c. flour

1t. baking soda

1/2t. salt

1/2c. shortening

1/2c. peanut butter

1/2c. white sugar

1/2c. firmly packed brown sugar

1 egg

2T. milk

1t. vanilla

1 pkg. chocolate kisses, unwrapped

Sift together the first 3 ingredients.  In a large bowl with an electric mixer, cream shortening and peanut butter while gradually adding sugars.  Cream well.  Blend in dry ingredients gradually, mixing thoroughly.

Shape rounded teaspoons of dough into balls.  (I use a small levered scoop).  Roll each ball in granulated sugar and place on ungreased cookie sheet.

Bake at 375* for 8 minutes.  Remove from oven.  Place a whole candy kiss on top of each cookie, pressing down.  Bake 2-5 minutes longer.

Remove from pan to cool completely.

I hope that you have some time to slow down this season and enjoy the little things.
