Okay Y’all…The temps here are still in the high 90s every. single. day. And the humidity is scuba gear worthy. There is not a red leaf in sight, but I’m so ready for fall. Fall is my favorite season. With it comes an automatic nesting instinct which I love. Since my weather isn’t cooperating with the season I thought I’d try to force it a little. I. will. make. it. be. fall. That always works right?
I’m not quite ready to pull out my gourds and bunches of wheat but what could a nice bouquet of sunflowers hurt?
Then I thought some pumpkin muffins would help to seal the deal.
This is, by far, one of the easiest recipes I have EVER made…and really tasty too.
I cannot take the credit for this yumminess, but I did adapt it a little bit.

Recently I pinned this recipe for a two ingredient Pumpkin Cake with Apple Cider Glaze.
To say I was skeptical would be an understatement. Well I gave it go anyway, and let me tell you this is totally a Pinterest YAY! (I have had a LOT of Pinterest NAYs!)
For my muffins I did not do a glaze, instead I did add a few spices that really amped up the flavor.
No Fail Pumpkin Muffins
1 box yellow cake mix
1 can (the smaller one, not the jumbo size) of pumpkin. Be sure you’re not using pumpkin pie filling.
1 1/2 t. pumpkin pie spice
Stir the ingredients together in a bowl. That’s it. Seriously. You do not need to add any oil, water, or eggs. I know! Could it be any simpler? Don’t think so. It starts out kind of gloppy, just keep stirring. It will come together to make a thick batter.
Scoop into muffin papers. For this batch I used the larger stiff papers that don’t require a muffin pan.
Bake at 350* for about 25 minutes or until lightly browned on top and firm to the touch. Remove from the oven and let cool.
The longer these muffins sit around the moister they get. Yummy!!!
So as I’m sitting on my back porch sweating profusely…I imagine I’m up in the mountains greeting the morning on the porch of a cozy log cabin, enjoying cool crisp air, falling leaves dancing in the breeze, the smell of a nice wood fire crackling in the fireplace, warm coffee in hand, flipping through home decor magazines, savoring the taste of fall with my pumpkin muffin. I have a VERY active imagination!!!
