I’ll be the first to admit it. I’m an ice cream junkie. No question about it. On those midnight raids to the fridge, what do I go for? Ice cream. Every time.
Here’s a quick and easy recipe I came up with for Mint Chocolate Chip Ice Cream. It’s cool and refreshing, sweet, with a hint of chocolate. Mmm, good!
Mint Chocolate Chip Ice Cream
1 pint half & half
1 quart whole milk
1 can sweetened condensed milk
1/2 c. granulated sugar
a pile of fresh mint, (about 1 1/2c.) leaves and stalks
1 t. vanilla
1c. shaved dark chocolate
In a pot heat milk and half & half until just below a simmer. Stir in sugar and sweetened condensed milk. Keep on the burner stirring constantly until sugar has dissolved. Turn off heat. Add mint. Steep for 30 minutes. After 30 minutes remove mint and add vanilla.
Put this mixture into a pitcher and refrigerate at least 2 hours, until thoroughly chilled.
Process in your ice cream maker according to the manufacturer’s instructions.
When mixture is almost finished freezing add chocolate shavings. (If you add them too early they will muddle the color of your ice cream and turn it brown).
There’s just something about that refreshing minty taste that cools me off instantly. How about you?
