French Style Cashew Bark

This sweet treat is SO yummy, and so pretty too!  It is incredibly easy to make and was inspired by a bark Ina Garten made on her show.

French Style Cashew Bark

1 pkg. chocolate almond bark

1 1/2 c. cashews with sea salt (toasted)

2 c. dried apricots (chopped)

1 1/2 c. dried cranberries

Line a jelly roll pan with wax paper.  Melt almond bark according to package directions.  Pour melted chocolate into jelly roll pan and spread it out (to about 1/4″ thickness) with a spatula.  Top with nuts, apricots, and cranberries.  Press toppings down into chocolate with your hands while the chocolate is still warm & soft.

Cool, remove from pan, then cut into 2″ squares.

I call this a nutritious treat…it does have nuts & dried fruit!
