I know we’re into the new year already. I’m a little behind in my posts. This is something I make every Christmas. My sweetie loves peanut brittle. His favorite peanuts are those really large “Virginia” peanuts you find in Williamsburg. When I don’t have those on hand I just use regular canned peanuts. In the brittle they are just as good.
This is a microwave recipe. When I started making this recipe we had a 1200 w. microwave and now we have a 1500 w. microwave so check yours and adjust the time accordingly. The stronger the oven, the less time needed. Be careful, sugar goes from perfect to burnt in a jiffy. As soon as the color begins to turn from clear to tan it’s time to finish up.
